Meatloaf

When I was 23 years old, my mother died. She had given us a legacy of love, laughter and good food. Really good food!

While I could go on and on about the special moments I've had with my mother, I am not going to right now. This post is going to be about the good food.

Because while we had her recipe book there are a few things for which she didn't leave any recipes. For most people this would be a little sad, but for a person like me who loves food, this is tragic!

Or maybe it is me going on and on about food which is tragic?

Moving on. I was unable to find her recipe for frikadeller, the Danish meatballs. My goodness, they were so, so good. Fortunately I was saved by a dear friend who had a pretty spectacular recipe. Thank you Miss Mona. They are tasty!

However, I have not been able to find a decent recipe for meatloaf. This might have had something to do with the fact that I have not been looking that much, but still!

Today we had the missionaries over for dinner and I thought it was about time I start on my quest for the perfect meatloaf a la mom recipe. Or to be fair, I was browsing the "Cowboy food" recipes on pionerwoman.com and stumbled over a recipe for meatloaf and I immediately had flashbacks of my mothers meatloaf.

I made it today. It is so easy to make and it is the perfect food for guests. You just put it in the oven and let it enjoy itself in there for an hour and then you are ready to eat! Easy peasy.

So the verdict?

Definitly not my mothers meatloaf, but the fact that this recipe included a spicy ketchup-based sauce on top had already given that away. My mothers was more of an old-school version - no spicy sauce there.

But I love it! I am planning on eating the rest for breakfast tomorrow ... what, too weird? For lunch then? Okay then, for lunch it is. And I know my mother will be okay with me saying this, so here goes - it was better than my mothers meatloaf.

You want the recipe? Here it is. And even if you like the old school version, give the fancy sauce on top a try! Samuel was dipping his bread in it and I was almost licking it off my plate.

I did alter the recipe a little since I did not have any tabasco sauce or dry mustard. I substituted it with some kick-ass dijon mustard to bring the heat, and it sure did.
